* steamed broccoli & baked potato w/ Chef AJ’s dressing, thin slices avocado & pinto beans on side made w/ 30 Minute Chili mix
* homemade very lowfat vegan ice cream sundae

Vegghetti & New Gym

5/23/24

Very veggie spaghetti w/ tomatoes, onion, mushrooms, sweet peppers, shreaded carrots, spinach & steamed broccoli on the side. Sprinkle top w/ nutritional yeast.

Today I showed up @ gym & I was alone, not a soul anywhere. I read the note posted on the door… They’re done, closed tightly. The note directed me to a different gym to continue my membership. A bit further away from home, but a very nice place!

Lunch In the Office

Silicone bowl inside airfryer
Parchment paper liner
Fresh green, yellow, orange & purple leafy veggies
Pre-cooked whole wheat pasta (other times this layer will be brown basmati rice)
Black bean chili (partially drained canned saltfree beans, add fire roasted tomato chunks, chopped red onion, garlic & onion powder, scoop of 30 Second Salsa powder, umami mushroom powder, palm XL-sugar)
Slide it into the old tested & true Avalon Bay airfryer to heat it up
Final touch is a drizzle of White Bean/Avocado dressing – blenderize cooked white beans & some of its water w/ fresh avocado, vinegar, dill weed, dill seed, garlic & onion powder, etc (Photo shows this meal prepared w/ rice instead of pasta)

A Few Delicious Dishes I’ve Been Eating!

THESE ARE OIL-FREE BAKED CORN TORTILLA STRIPS!
Veggies sautéed oil-free in rice vinegar & served over whole wheat pasta
Oil-free potato O’Brien w/ natural ketchup (no high fructose corn syrup) & garbanzo bean/cabbage wrap in unleavened flatbread
Oatmeal w/ berries, splash of almond milk & few broccoli sprouts
Brown jazmine rice w/ shredded carrot, celery, onion, cruciferous veggies, blenderized nori sheet & rice vinegar sprinkled on top
Whole wheat pasta w/ tomato sauce, veggies, nutritional yeast & veggie balls

Those meatballs were perfect! I simply mashed some black beans, added dry rolled oats, healthy bbq sauce, added diced mushrooms & seasoning. Then I baked for 20 or 30 minutes. Delish!

EXERCISE:  I’ve been doing early morning powerwalks for 45 minutes inside the local indoor mall. Outdoor weather is getting nice & sunny, but the harsh Springtime winds are not always conducive to a pleasant 5k jog. Brief outdoor post-meal jogs are perfect!

* hybrid avocado toast (smashed garbanzo beans combined w/ avocado, then spread it on sourdough toast & top w/ sliced tomato, broccoli microgreens), jicama on the side & few jr mints
* grilled bbq’d asparagus & mushrooms

Day 1 of Year TEN!!! Low-SOS Vegan Plan

Today I am celebrating TEN YEARS of recording my daily low-SOS  (salt-oil-sugar) vegan lifestyle. Hurray!! Now I will relax, cut back on this daily chore & only record my meal & workouts occasionally.  From this point forward I’ll not keep track of day/year. I’ll just jump-in & post when the Spirit moves me. I’m looking forward to continuing this delicious & life affirming modality!

EXERCISE:
* Powerwalk 4 miles indoors pre-meal
* Lift shoulders & upper back @ gym (alternate push & pull)
* Walk across campus 20 min

WATER:
(2) × (32) = 64 oz (+)

EATS:
* veggie pancake w/ ground oatmeal & wheat flour, shreaded carrot, mushroom, cabbage, cauliflower, red onion, broccoli, cilantro, paper-thin sliced raw almonds, teriyaki dip & plain sparkling water w/ shot of soft XL-drink
* unsweetened applesauce & vegan cheese-like crackers
* Mexi-bowl w/ pinto beans, rice, salsa, cilantro, quarter avocado, onion, cabbage, kale & variety of steamed cruciferous crunch veggies
* baked oilfree French “fries” w/ natural ketchup
* thin rice cakes w/ reconstituted defatted choco-peanut butter powder
* canned peaches in pear juice (no added sugar)

* Lift lower body @ gym & on Total Gym
* Jog 20 minutes outdoors post-meal

WATER:

* oatmeal & Wheatena w/ blueberries, powders (green stuff, pomegranate & beet powder), banana, paper-thin sliced raw almonds & splash of almond milk
* very veggie spaghetti – whole wheat pasta w/ tomato sauce containing quinoa, fire roasted veggies (brussel sprouts, mushrooms, red, green & yellow peppers, red onions), nutritional yeast
* some multi-colored steamed cauliflower
* raw gorilla salad w/ butter beans (no fat), cruciferous veggies, tomatoes, sweet peppers, red onions, unsweetened rice vinegar, seasoning, etc
* celery stalks w/ a bit of reconstituted defatted cocoa peanut powder
