High Protein Vegan Sweet Potato Pudding

2 cups mashed sweet potato
1/2 cup cocoa powder
6 medjool dates
2 tbsp nut or seed butter
2 tsp vanilla extract
1/3-1/2 cup unflavored protein powder (optional)
1/4 cup plant milk

Combine all the ingredients in a food processor or blender until smooth. Refrigerate for minimum 20 minutes
