How to make a vegan Ethiopian platter

Ethiopian platter is a very healthy vegan platter with lentils, vegetables, and fermented flatbread Injera. The platter is rich, fiber, gluten-free, and a combination of complex flavors. This recipe has 7 different side dishes with different vegetables and lentils.

* had lunch w/ Mom – bowl of beans, rice,  cabbage, kale, brussel sprouts, onion, cilantro, avocado & salsa from Pollo Loco (our favorite restaurant)
* oilfree, eggfree, dairyfree Trader Joe’s  cornbread

* Traverse outdoor & indoor stairs on multiple occasions today

WATER:

EATS:
* Multiple servings of cooked oatmeal & grapenuts w/ blueberries, raspberries, powders (vitamin C, green stuff, pomegranate,  beet), splash of almond milk
* chopped salad (romaine, chicory, broccoli, cauliflower, red cabbage, carrots, kale, green cabbage, brussels sprouts, etc) w/ leftover brown jazmine rice, dressed w/ Wow Your World oilfree & saltfree sweet mustard dressing thinned w/ apple cider vinegar
* pinto bowl w/ beans, rice, cabbage, onion, avocado, cilantro, salsa (just a bit too XL-salty)

* Powerwalk indoors 45 minutes 
* Lift biceps (pull) & triceps (press)

WATER:
(2) Ă— (32) = 64 oz (+)

EATS:
* 3 ingredient pancakes (banana, oats, almond milk), but I blenderized fresh kale w/ milk (green Martian milk!) I also blended some blueberries w/ almond milk & a few cashews to make a sauce… then dipped pancakes in it!
* red grapes
* very veggie spaghetti w/ steamed broccoli topped w/ nutritional yeast
* banana w/ 5 almonds
