Ingredients:

🍠 2 large pre-baked sweet potatoes
🫘 Chickpea flour (sifted)
🧅 Onion
🍅 Tomato paste
🍅 Cherry tomatoes
🧈 Smoked tofu [or rehydrated soycurls]
🧂 Salt
🌶️ Curry powder

Method:

1️⃣ Mash the pre-baked sweet potatoes and mix with the sifted chickpea flour until a dough forms.
2️⃣ Spread the mixture onto a lined baking tray to form a pizza base. Bake until lightly golden and set.
3️⃣ Meanwhile, dice the onion and cook it in a pan with a splash of water until caramelised.
4️⃣ Tear most of the smoked tofu [or chopped rehydrated soycurls] into small chunks and air fry for 5–10 minutes until crispy. Reserve about one-third of the block for the sauce.
5️⃣ Add the tomato paste, curry powder, and salt to the onions and cook for another couple of minutes.
6️⃣ Transfer the onion mixture to a blender, add the remaining one-third of the smoked tofu, and blend until smooth and creamy.
7️⃣ Carefully remove the baked pizza base from the baking paper and spread the tofu sauce evenly over the top.
8️⃣ Scatter over the crispy tofu and cherry tomatoes, sprinkle with a little extra salt, and return to the oven until everything is hot and the tomatoes are slightly roasted.
