Ingredients:
π 2 huge aubergines
π₯¬ Lettuce
π Purple cabbage
π₯ Cucumber
π« Edamame
π Cooked rice
Marinade & Dressing:
π₯ Miso paste
π₯’ Soy sauce
π Maple syrup
β¨ Furikake seasoning (or π± sesame seeds)
πΏ Fresh coriander to serve
Method:
1οΈβ£ Slice the aubergines in half lengthways and score the flesh in a criss-cross pattern.
2οΈβ£ In a small bowl, mix together the miso paste, soy sauce, maple syrup, and furikake seasoning (or sesame seeds).
3οΈβ£ Brush the aubergines generously with the dressing and bake until soft, caramelised, and looking absolutely delicious β¨
4οΈβ£ Add the lettuce, purple cabbage, cucumber, edamame, and cooked rice to a large bowl.
5οΈβ£ Top with the roasted aubergines and drizzle over the remaining dressing.
6οΈβ£ Finish with fresh coriander and enjoy π
