Low-SOS Modified Apple Blossom Dessert

Frozen phyllo dough is a reasonable fit for a low-SOS vegan dessert, replacing puff pastry because it gets crisp and flaky without relying on large amounts of fat.

One challenge is that traditional phyllo recipes brush each layer with butter or oil. For an SOS-free version, you can use aquafaba (the liquid from unsalted chickpeas) or unsweetened applesauce very lightly between layers, or simply mist with water. The phyllo won’t be quite as rich, but it will still crisp nicely in the oven.

# Blueberry & Walnut Apple Blossoms (SOS-Free Vegan)

## Ingredients

### Apples

* 4 large apples
* 1 cup fresh blueberries

### Filling

* Apple pulp from hollowing the apples, finely chopped
* ¾ cup walnuts, roughly chopped
* 4–6 Medjool dates, finely chopped or mashed into a paste
* 1 tsp cinnamon
* ½ tsp vanilla extract
* 1–2 tbsp water as needed

### Phyllo Blossom Petals

* 6–8 sheets frozen phyllo dough, thawed
* Aquafaba, unsweetened applesauce, or water for brushing

### Garnish

* Lemon zest
* Fresh mint
* Optional banana nice cream



## Instructions

### 1. Prepare the Apples

1. Preheat oven to 375°F (190°C).
2. Hollow out the apples, leaving the bottoms intact.
3. Finely chop the removed apple flesh.

### 2. Make the Filling

1. Place the chopped apple flesh in a skillet with a tablespoon of water.
2. Cook until softened, about 4–5 minutes.
3. Stir in the walnuts, dates, cinnamon, and vanilla.
4. Cook another 2–3 minutes until the dates soften and create a caramel-like mixture.
5. Fold in the blueberries and remove from heat.

### 3. Fill the Apples

Spoon the filling into the hollowed apples, packing gently.

### 4. Create the Phyllo Blossoms

1. Cut phyllo sheets into strips about 2 inches (5 cm) wide.
2. Lightly brush each strip with aquafaba or applesauce.
3. Loosely accordion-fold or ruffle the strips.
4. Wrap the strips around the top half of each apple, leaving portions of the filling visible.
5. Tuck the ends underneath or secure them against the apple so they hold their shape.

The ruffled phyllo creates a flower-petal appearance once baked.

### 5. Bake

1. Place apples on a parchment-lined baking sheet.
2. Lightly brush exposed phyllo with a little more aquafaba.
3. Bake 30–40 minutes, until:

   * apples are tender,
   * blueberries are bubbling,
   * phyllo is crisp and golden.

If the phyllo browns too quickly, loosely tent with foil for the remainder of the baking time.

### 6. Serve

Finish with:

* fresh lemon zest,
* mint leaves,
* a scoop of banana nice cream if desired.

## Optional Flavor Upgrades

Without adding salt, oil, or refined sugar, you can deepen the flavor with:

* orange zest in the filling,
* cardamom or nutmeg alongside the cinnamon,
* a tablespoon of balsamic vinegar cooked into the apple-date mixture,
* toasted walnuts before mixing into the filling.

This version keeps the original idea of a flaky “apple blossom” while staying vegan and compatible with a strict SOS-free approach.
