4 oz (1/2 bag) Butler Soy Curls
2 cups hot water or low-sodium vegetable broth
1/4 cup diced white onion
1/4 cup diced bell pepper
BBQ sauce (to taste)
1/2 tsp red wine vinegar
Instructions:
Rehydrate: Soak the soy curls in 2 cups of hot water or broth for about 10 minutes until soft (5:50-6:47).
Prep Vegetables: While the soy curls soak, sauté the diced onion and bell pepper in a pan with a splash of vegetable broth to prevent sticking (6:54-7:25).
Drain and Squeeze: Drain the hydrated soy curls in a colander and use a tool like a potato masher to squeeze out as much moisture as possible to improve the texture (9:45-10:23).
Brown: Add the soy curls to the skillet with the vegetables and cook until they develop some color (11:12-11:40).
Simmer: Turn the heat to medium-low, add your preferred BBQ sauce, and stir until coated. Mix in the 1/2 tsp of red wine vinegar for a little extra tang (11:54-13:45).
