Ingredients (makes 6 wraps):
π« 2 cups chickpeas

ΒΌ onion
π§ 2 garlic cloves
πΏ Β½ cup parsley
π± 1 tbsp cumin powder
π± 1 tbsp coriander powder
π§ 1 tsp salt
π₯ 1 tsp baking powder
π― Oil-free wraps
Extras:

Tomato
π₯ Cucumber
π₯¬ Lettuce
π± Sauerkraut
Tahini Sauce:
π₯£ 2 tbsp unsweetened vegan yoghurt
π₯ 1 tbsp tahini
π Juice of 1 lemon
π§ Β½ tsp garlic powder
π§ Pinch of salt
Method:
1οΈβ£ Add the chickpeas, onion, garlic, parsley, cumin, coriander, salt and baking powder to a food processor. Blitz until combined.
2οΈβ£ Spread a few tablespoons of the falafel mixture over each wrap.
3οΈβ£ Place the wraps falafel-side down in a preheated non-stick pan over medium-high heat.
4οΈβ£ Cook for 3β5 minutes until the falafel is golden and crispy.
5οΈβ£ Mix the vegan yoghurt, tahini, lemon juice, garlic powder and salt to make your creamy sauce.
6οΈβ£ Add your favourite fresh veggies, sauerkraut and tahini sauce, then wrap everything up and ENJOY! π―β¨
I used homemade beetroot oat wraps for that gorgeous pink colour, but any oil-free wraps will work!
