* leftover Ethiopian food (lentils, beets, green beans, cauliflower, potato, cabbage, carrot, onion, injera teff flatbread)
* fresh spinach/cilantro salad w/ bell pepper, jalapeño, tomato, broccoli micro-greens, arugula micro-greens, mango salsa, lemon juice, some salt
* salad served twice today: morning w/ avocado seeded fiber toast, afternoon w/ leftover injera
* rolled oats cooked in water w/ wheatena and added fresh strawberries
