Shredded Tofu and Sweet Potato English Muffin Sand

Ingredients:

For the Tofu:
1 block of super firm tofu, thinly sliced or shredded
EVOO spray
1/4 tsp turmeric powder
1⁄2 tsp garlic powder
1⁄4 tsp paprika
1/4 tsp kala namak (AKA Indian black salt)
Freshly cracked black pepper
1 tbsp tahini
2 tbsp nutritional yeast
1⁄2 cup soy milk

For the Sweet Potato:
1 large sweet potato, sliced thinly (or shredded)
A pinch of salt
1⁄2 tsp smoked paprika

Cashew Chipotle Queso:
3/4 cup raw cashews
2 tbsp nutritional yeast
1⁄4 tsp salt (optional)
1⁄8 tsp garlic powder
1⁄4 tsp cumin
1/4 tsp paprika
1/2 of a chipotle pepper in adobo sauce
1/2 cup boiling hot water and few tbsp more (as needed) to make the queso thinner
