Opinion: I teach calculus at Berkeley. Some of my students can’t do middle school math
Aug 16, 2026
“I teach mathematics at UC Berkeley. Three days a week, I stand in front of lecture halls with 500 to 1,400 students. By the second week of the semester, I already know who is in trouble. Some students are five to eight years behind in mathematics. Office hours that should be spent discussing integrals instead become lessons on fractions and basic algebra you would expect students to learn in middle school.”

Ten low-SOS vegan lunch ideas
Here are 10 quick, low-SOS vegan lunch ideas using simple ingredients readily available at any standard supermarket:
Avocado Chickpea Wrap:

Mash rinsed low-sodium canned chickpeas with a ripe avocado, fresh lemon juice, and a pinch of garlic powder. Roll the mixture into an oil-free whole-grain tortilla with fresh arugula or spinach.
Warm Lentil & Tomato Bowl:

Combine pre-cooked or rinsed low-sodium canned lentils with freshly diced Roma tomatoes, minced garlic, and chopped fresh basil. Warm the mixture and serve it over a microwaveable pouch of plain, unseasoned brown rice.
No-Egg Tofu Salad Sandwich:

Crumble firm tofu into a bowl and mix with a splash of yellow mustard, a pinch of turmeric, garlic powder, and finely diced celery. Spread it onto oil-free sprouted grain bread or scoop it into large romaine lettuce boats.
Southwest Black Bean & Corn Salad:

Toss together rinsed low-sodium canned black beans, thawed frozen sweet corn, diced red onion, and chopped orange bell peppers. Dress the salad with fresh lime juice and a generous handful of chopped cilantro.
Quick Potato & Broccoli Scramble:

Chop a microwave-steamed potato and place it in a hot skillet with a splash of water to prevent sticking. Add fresh broccoli florets, garlic powder, and nutritional yeast, then sauté until heated through.
Curried Chickpea & Spinach Bowl:

Simmer rinsed low-sodium canned chickpeas in a skillet with no-salt-added tomato sauce and curry powder. Stir in a handful of fresh baby spinach until wilted and serve over plain quinoa.
Cucumber Hummus Veggie Plate:

Blend drained chickpeas with fresh lemon juice, a garlic clove, and a splash of water or aquafaba instead of oil to make a smooth dip. Serve the dip alongside raw cucumber slices, baby carrots, and bell pepper strips.
Sweet Potato Black Bean Bowl:

Pierce a whole sweet potato with a fork and microwave it for five to seven minutes until soft. Split it open and top it with rinsed low-sodium black beans, a scoop of fresh oil-free grocery store salsa, and chopped green onions.
Garden Greens & Rice Salad:

Finely chop mixed spring lettuce, tomatoes, and shredded carrots. Toss the vegetables with a cup of cold, pre-cooked brown rice and dress with apple cider vinegar or fresh lemon juice.
Three-Ingredient Black Bean Soup:

Pour a can of no-salt-added black beans into a small pot with a half-cup of low-sodium vegetable broth. Stir in a half-cup of jarred oil-free salsa, add a pinch of cumin, and simmer for five minutes before serving. -sloppy-joes)
