EXERCISE:
* Much walking on campus today – elevator closed for repairs, so I slowly climbed up/down various staircases… (stitches removed today, I’ll be jogging in two more weeks!)

EATS:
*fresh jackfruit
* seasoned-boiled red potatoes w/ mushrooms, steamed broccoli & cranberry-walnut bread w/ avocado
* two small choco-mint XL-cookies w/ raw almonds
* homemade airfryer-baked tortilla strips w/ guacamole (my old airfryer broke today, started smoking & melting plastic exterior… so I searched online for one w/ manual dial controls & here’s what I found… )

Comment: When we say “carbs” we should specify processed (bad) carbs as the culprit – think white flour (white bread, white pizza dough, white pasta, white pastries, white rice, sweet desserts, many breakfast cereals, table sugar, etc). However, consuming UNPROCESSED (good) CARBS is essential to our health. (Think brown rice, barley, quinoa, bran cereal, oatmeal, whole wheat or multigrain bread, all varieties of veggies, fruit, legumes – kidney beans, baked beans, peas, lentils.)

* fresh jackfruit (ripened pods by storing them covered overnight w/ couple unpeeled banana in the bowl)
* rolled oats w/ wild blueberries, powders (flaxseed, pomegranate, beet, green stuff, barley-alfalfa, vitamin C), almond milk & banana
very veggie burger sandwich on sourdough (no mayo, no cheese)
* homemade airfryer-baked tortilla strips w/ guacamole
* leftover Moroccan stew w/ brown jazmine rice (added some cashews & creamed it in blender, just for fun… cream of Moroccan soup!)
