OIL-FREE VEGAN CHOCOLATE CHIP COOKIES

Ingredients:
1 tbsp flax seed
1 1/2 tbsp water
1 3/4 cup oat flour
1/3 cup coconut sugar (or date paste)
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 tsp vanilla extract
2 tbsp maple syrup
1/4 cup non-dairy milk
1/2 ripe banana
1/4 cup vegan chocolate chips
1/4 cup walnuts
Instructions:
In a small dish, mix flax seed with water and set to the side for 5 minutes to make the flax “egg”
Pre-heat oven to 350 degrees
In a separate bowl mix the flour, sugars, baking soda, baking powder and salt
Add in slowly the vanilla, maple syrup, flax “egg”, milk & banana until well combined
Stir in the chocolate chips & walnuts
Roll in tbsp sized balls and place cookie dough on parchment paper lined baking sheet
Flatten them out a little with your palm
Bake (15 min for oat flour)
(Wrap leftovers up with a slice of bread to keep soft until the next day)
